Lambics(†) and Flemish Brown
Ales
Lambics are spontaneously fermented beers from the area around Brussels.
Fermenters are open, allowing the naturally occuring wild yeasts
(along with some other critters) to do their thing. Many of these
breweries are quite a sight, as the brewers dare not clean up as
this might risk the removal of precisely those yeasts that make
the beer unique...A «Gueuze» is a blend of old and young
lambic, while «Kriek» and «Framboise» are
flavored with sour cherries and raspberries, respectively. Flemish
Brown Ales have a unique sweet-and-sour characteristic, and sometimes
include fruit as well.

Trappist And Abbey Ales
Trappist Ales are only those made by actual monks in one of five
Trappist monasteries in Belguim (the Dutch La Trappe products
recently became Abbey Ales). Many commercial brewers imitate
the styles found in the Trappist abbeys, and these are generally
referred to as abbey ales. Dubbels are dark and malty, while Tripels
are light, dry, and a little hoppier.
